Linguine Pasta
- 8 ounces linguine pasta
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup unsalted butter, melted
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 0.25 teaspoon red pepper flakes (optional)
- 0.5 cup grated Parmesan cheese
Prepare the chicken by cutting it into bite-sized pieces and seasoning with garlic powder, onion powder, smoked paprika, salt, and black pepper.
Melt the unsalted butter in a small bowl and stir in chopped parsley and lemon juice. Add red pepper flakes if desired.
Cook the linguine in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
In a skillet, heat olive oil over medium-high heat. Add seasoned chicken and cook until browned and cooked through, about 5-7 minutes.
Reduce heat to low and pour the melted cowboy butter sauce over the chicken, stirring to combine.
Add the cooked linguine to the skillet and toss gently to combine. Add reserved pasta water as needed for desired consistency. Serve hot, topped with grated Parmesan cheese and parsley.
