Graham Cracker Crust
- 1.5 cups graham cracker crumbs
- 0.5 cups unsalted butter, melted
- 2 tablespoons granulated sugar
Cheesecake Filling
- 16 ounces cream cheese, softened
- 0.5 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
Cookie Dough Layer
- 1 cup all-purpose flour
- 0.5 teaspoon baking soda
- 0.25 teaspoon salt
- 1 cup brown sugar, packed
- 0.5 cups unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
Prepare the cookie dough layer by creaming together brown sugar and softened butter until light and fluffy. Add egg and vanilla extract, mix well. In a separate bowl, whisk together flour, baking soda, and salt, then gradually add to wet ingredients until just combined. Set aside.
Make the cheesecake filling by beating cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract. In another bowl, whisk together flour, baking soda, and salt, then gradually add to cream cheese mixture. Fold in mini chocolate chips.
