- 2 tablespoons vegetable oil for sautéing
- 1 small onion, diced provides sweetness and depth

Heat vegetable oil in a large pot over medium heat. Sauté diced onion for 3-4 minutes until soft and translucent.

Add chicken broth and water, then soy sauce and sesame oil. Bring to a gentle simmer.
Add frozen potstickers and cook according to package instructions, about 5-7 minutes.
Add sliced mushrooms and baby spinach. Cook for another 2-3 minutes until spinach wilts.
Season with salt and pepper to taste, stir, and serve.
