Ingredients

Meat Mixture

  • 1.5 pounds ground beef (80/20) This blend of meat provides the right amount of fat for a juicy meatloaf.
  • 1 cup breadcrumbs Breadcrumbs help bind the meatloaf together while adding a nice texture.
  • 1 small onion, finely chopped Onions add flavor and moisture to the meat mixture.
  • 1 cup milk Milk keeps the meatloaf moist and tender.
  • 2 large eggs Eggs act as a binder, helping to hold everything together.
  • 2 teaspoons Worcestershire sauce This sauce adds a rich, savory depth to the flavor.
  • 1 teaspoon garlic powder Garlic powder enhances the overall taste with a hint of warmth.
  • 1 teaspoon salt Salt is essential for bringing out the flavors in the meat.
  • 0.5 teaspoon black pepper Black pepper adds a subtle kick to the dish.
  • 0.5 teaspoon dried thyme Thyme contributes an earthy aroma and flavor.

Tangy Glaze

  • 0.5 cup ketchup Ketchup is the base of the glaze, providing sweetness and tang.
  • 0.25 cup brown sugar Brown sugar adds a rich sweetness that balances the tanginess.
  • 2 tablespoons apple cider vinegar This vinegar gives the glaze its signature tangy flavor.

Instructions

  • Preheat your oven to 350°F.
  • In a large mixing bowl, combine all the ingredients for the meat mixture: ground beef, breadcrumbs, chopped onion, milk, eggs, Worcestershire sauce, garlic powder, salt, black pepper, and dried thyme. Mix until just combined.
  • Transfer the mixture into a loaf pan and mold it into a loaf shape.
  • In a separate bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze.
  • Place the shaped meatloaf in the preheated oven and bake for 60 minutes. After 30 minutes, brush half of the tangy glaze over the top.
  • Let the meatloaf rest for 10 minutes before slicing and serving with the remaining glaze on the side.
