Chicken
- 2 cups cooked chicken shredded or diced, rotisserie chicken works great
- 1/2 cup mayonnaise adjust based on preference
- 1/4 cup plain Greek yogurt adds creaminess and a healthy twist
- 1 tablespoon Dijon mustard for tanginess
- 1 tablespoon lemon juice fresh for brightness
- 1/2 cup celery finely chopped
- 1/4 cup red onion finely chopped
- 1/2 cup grapes halved or diced apples can be used
- 1/4 cup slivered almonds optional for crunch
- Salt and pepper to taste
- Lettuce leaves optional for serving
Prepare the chicken by shredding or dicing it into bite-sized pieces.
Chop the celery and red onion finely. Halve the grapes or dice the apples.
In a large mixing bowl, combine mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Stir until well blended.
Add the prepared chicken, chopped vegetables, and optional slivered almonds to the bowl. Gently stir until evenly coated.
