Base
- 2 cups ricotta cheese drained
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 cup heavy cream
- 1/2 cup mini chocolate chips
- 1 package (8 ounces) graham crackers
- 1 cup chocolate chips melted
- chopped pistachios for garnish (optional)
Prepare the graham crackers as the base for your cannoli squares.
In a large mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, and ground cinnamon until smooth. In a separate bowl, whip the heavy cream until stiff peaks form and gently fold it into the ricotta mixture.
Line an 8x8-inch baking dish with parchment paper. Layer graham crackers, half of the ricotta mixture, and half of the mini chocolate chips. Repeat the layers and top with another layer of graham crackers.
Pour melted chocolate chips over the top layer of graham crackers and spread evenly. Cover with plastic wrap and refrigerate for at least 240 minutes.
After chilling, lift the dessert out using the parchment paper, cut into squares, and garnish with chopped pistachios if desired.
