Dough Ingredients
- 2.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 1 teaspoon ground cinnamon
- 0.75 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 0.5 cup brown sugar, packed
- 1 tablespoon ground cinnamon (for filling)
- 1 cup powdered sugar (for icing)
- 2 tablespoons milk (for icing)
- 0.5 teaspoon vanilla extract (for icing)
Preheat your oven to 350°F (175°C). In a medium bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon.
In a large bowl, cream together the softened butter and granulated sugar for 2-3 minutes until light and fluffy. Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture and mix until just combined.
In a small bowl, mix together brown sugar and ground cinnamon for the filling.
Roll the dough into a rectangle about ¼ inch thick, sprinkle the cinnamon sugar filling evenly over the dough, and roll it into a log.
Slice the log into 1-inch thick rounds and place them on a prepared baking sheet.
Bake for 10-12 minutes until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
