Instructions
 

  • Prepare the dough by whisking together flour, baking soda, salt, and cinnamon in a medium bowl. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract, then gradually add the dry ingredients until just combined. Fold in any optional nuts or raisins.
  • Create the cinnamon filling by mixing brown sugar, ground cinnamon, and softened butter in a small bowl until smooth.
  • Roll out the cookie dough into a rectangle about 1/4 inch thick, spread the cinnamon filling evenly over the surface, then roll the dough into a log shape and slice into 1-inch thick rounds.
  • Preheat the oven to 350°F. Bake the cookies for 10-12 minutes until edges are lightly golden. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Prepare the icing by whisking together powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled cookies.
