Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 cups granulated sugar
  • 0.5 cups packed brown sugar
  • 0.5 cups unsalted butter melted and slightly cooled
  • 2 large eggs
  • 2 ripe bananas mashed
  • 1 teaspoon vanilla extract
  • 0.5 cups chopped walnuts or pecans optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Prepare your muffin tin by lining it with paper liners or greasing it.
  • In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, salt, cinnamon, granulated sugar, and brown sugar.
  • Mash the ripe bananas in a separate bowl until smooth with a few lumps.
  • In the bowl with the mashed bananas, add melted butter, eggs, and vanilla extract. Mix until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Fill each muffin cup about ¾ full with the batter.
  • Bake in the preheated oven for 18-22 minutes, or until a toothpick comes out clean.
  • Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.
