Dry Ingredients
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1 teaspoon ground cinnamon
- 0.5 cups granulated sugar
- 0.5 cups packed brown sugar
- 0.5 cups unsalted butter melted and slightly cooled
- 2 large eggs
- 2 ripe bananas mashed
- 1 teaspoon vanilla extract
- 0.5 cups chopped walnuts or pecans optional
Preheat your oven to 350°F (175°C).
Prepare your muffin tin by lining it with paper liners or greasing it.
In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, salt, cinnamon, granulated sugar, and brown sugar.
Mash the ripe bananas in a separate bowl until smooth with a few lumps.
In the bowl with the mashed bananas, add melted butter, eggs, and vanilla extract. Mix until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined.
Fill each muffin cup about ¾ full with the batter.
Bake in the preheated oven for 18-22 minutes, or until a toothpick comes out clean.
Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.
