Flank Steak
- 1 pound flank steak
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups cooked brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1 avocado sliced
- 1/4 cup fresh cilantro, chopped
- 2 limes juice of
- 1/2 cup sour cream or Greek yogurt (optional)
Marinate the flank steak with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper for at least 30 minutes.
Preheat the grill or grill pan over medium-high heat and cook the marinated steak for 5-7 minutes on each side for medium-rare.
Let the steak rest for 5 minutes, then slice thinly against the grain.
Prepare the brown rice according to package instructions if not pre-cooked.
Assemble the bowl by layering cooked brown rice, black beans, corn, halved cherry tomatoes, and sliced steak. Garnish with avocado, cilantro, and lime juice.
