- 1 cup semi-sweet chocolate chips These will be the star of your croissants, providing that rich chocolatey goodness.
- 1 egg beaten (for egg wash) The egg wash gives your croissants a beautiful golden color when baked.
Mix together the flour, salt, and sugar in a large bowl. Add the cold, cubed butter and blend until it resembles coarse crumbs. Gradually add cold water and mix until the dough comes together.
Shape the dough into a rectangle, wrap in plastic wrap, and refrigerate for at least 60 minutes. Roll out the dough into a larger rectangle, fold into thirds, and refrigerate for another 30 minutes. Repeat this process one more time.
Preheat the oven to 400°F (200°C). Roll out the dough into a rectangle, cut into triangles, and place chocolate chips at the wide end of each triangle. Roll up the triangles towards the point.
Curve the ends of each rolled triangle towards each other to form a crescent shape. Place on a baking sheet lined with parchment paper and proof for 30 minutes.
Brush the tops with the beaten egg and bake for 15-20 minutes until golden brown. Allow to cool slightly before serving.
