Cookie Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract (for cheesecake filling)
Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
In a large bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Add in the egg and 1 teaspoon of vanilla extract, mixing until well combined.
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the semi-sweet chocolate chips.
In a separate bowl, beat together the softened cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract until smooth and creamy.
Drop spoonfuls of cookie dough onto the prepared baking sheet, leaving space between each. Make a small indentation in the center of each cookie and fill with about a teaspoon of the cheesecake filling. Cover with another spoonful of cookie dough.
Bake for 10-12 minutes until edges are lightly golden and centers are soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
