Base Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 can (15 ounces) tomato sauce
  • 1 cup chicken broth
  • 2 tablespoons taco seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (for topping)
  • 1 whole avocado, diced (for topping)
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional, for serving)

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add diced onion and sauté for 5 minutes until soft. Stir in minced garlic and cook for 1 minute.
  • Add chicken, chicken broth, black beans, corn, diced tomatoes, tomato sauce, taco seasoning, cumin, salt, and pepper. Stir and bring to a boil.
  • Reduce heat to low, cover, and let simmer for 20-25 minutes.
  • Remove chicken, shred it, and return to the pot. Simmer for an additional 5 minutes.
  • Serve topped with cheddar cheese, avocado, cilantro, and sour cream if desired.
