Orzo Pasta
- 2 cups orzo pasta
- 1 tablespoon olive oil for cooking
- 1 pound chicken sausage sliced
- 2 cups broccoli florets fresh
- 3 cloves garlic minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- 1/2 cup grated Parmesan cheese for serving
- 1 tablespoon lemon juice for brightness
- fresh parsley chopped for garnish
Prepare the ingredients by measuring the orzo, slicing the chicken sausage, washing and cutting the broccoli, and mincing the garlic.
In a large pot, heat the olive oil over medium heat. Add the sliced chicken sausage and cook for 5-7 minutes until browned.
Add the minced garlic and cook for 1 minute until fragrant. Then, toss in the broccoli florets and sauté for 2-3 minutes until they start to soften.
Pour in the chicken broth and bring to a boil. Add the orzo and Italian seasoning, reduce heat to a simmer, and cook for 10-12 minutes.
Once the orzo is cooked, remove from heat and stir in the grated Parmesan cheese and lemon juice. Season with salt and pepper to taste.
