Instructions
 

  • Slice the boneless, skinless chicken breasts into thin strips and season with salt and pepper. Set aside.
  • Cook the lo mein noodles in boiling water for 4-5 minutes, then drain and rinse under cold water.
  • In a skillet or wok, heat vegetable oil and stir-fry the chicken for 5-7 minutes until browned. Remove and set aside.
  • Stir-fry the bell peppers, snap peas, carrots, garlic, and ginger for 3-4 minutes until tender-crisp.
  • Combine the chicken, noodles, soy sauce, oyster sauce, sesame oil, and sugar in the skillet. Toss and cook for an additional 2-3 minutes.
  • Adjust seasoning with salt and pepper, serve hot garnished with green onions.
