Chicken and Vegetables
- 1 pound ground chicken
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 4 cups coleslaw mix shredded cabbage and carrots
- 1 cup sliced green onions
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha optional, for heat
- to taste salt and pepper
- as needed cooked rice or cauliflower rice for serving
Heat a large skillet over medium heat. Add the ground chicken and cook for 5-7 minutes, stirring occasionally until browned. Drain excess fat.
Stir in soy sauce, sesame oil, garlic powder, and ground ginger. Cook for an additional 2 minutes.
Add coleslaw mix and sliced green onions. Stir and cook for 3-4 minutes until cabbage wilts slightly.
Combine everything well and adjust seasoning with salt and pepper.
Drizzle with rice vinegar and sriracha, stir for another minute, then serve over cooked rice or cauliflower rice.
