Chicken and Vegetables

  • 1 pound ground chicken
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 4 cups coleslaw mix shredded cabbage and carrots
  • 1 cup sliced green onions
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha optional, for heat
  • to taste salt and pepper
  • as needed cooked rice or cauliflower rice for serving

Instructions
 

  • Heat a large skillet over medium heat. Add the ground chicken and cook for 5-7 minutes, stirring occasionally until browned. Drain excess fat.
  • Stir in soy sauce, sesame oil, garlic powder, and ground ginger. Cook for an additional 2 minutes.
  • Add coleslaw mix and sliced green onions. Stir and cook for 3-4 minutes until cabbage wilts slightly.
  • Combine everything well and adjust seasoning with salt and pepper.
  • Drizzle with rice vinegar and sriracha, stir for another minute, then serve over cooked rice or cauliflower rice.
