  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 package (1 lb) refrigerated pie crusts (2 crusts)
  • 1 egg beaten (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions
 

  • Prepare the pie crust by letting it sit for 10 minutes, then roll it out and cut into 3-inch circles.
  • Make the cherry filling by combining cherries, sugar, cornstarch, vanilla, and almond extract in a saucepan over medium heat for 5-7 minutes until thickened.
  • Assemble the pie bites by placing filling on half of the dough circles, topping with the other half, and sealing the edges.
  • Preheat the oven to 375°F, brush the tops with egg wash, sprinkle with coarse sugar, and bake for 20-25 minutes until golden brown.
