Ingredients
  

Zucchini

  • 2 medium zucchinis, sliced into thin rounds
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked Italian sausage or ground beef
  • 1/2 cup sliced pepperoni
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil

Instructions
 

  • Wash the zucchinis thoroughly and slice them into thin rounds. Set aside.
  • Heat olive oil in a large skillet over medium heat. Add chopped onion and bell pepper, sauté for 5 minutes until soft. Stir in cooked Italian sausage or ground beef, marinara sauce, oregano, garlic powder, salt, and black pepper. Cook for an additional 3-4 minutes.
  • Grease a 9x13 inch baking dish. Layer half of the zucchini slices, half of the meat sauce mixture, half of the mozzarella cheese, and half of the pepperoni. Repeat layers and top with grated Parmesan cheese.
  • Cover with aluminum foil and bake in a preheated oven at 375°F for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden. Let cool for 5-10 minutes before serving.
