Instructions
 

  • Preheat your oven to 400°F. Wash and scrub the sweet potatoes, poke holes in them, and bake for 45-60 minutes until tender.
  • Once cool, slice the sweet potatoes in half and scoop out the flesh, leaving 1/4 inch on the skin.
  • Mix the scooped flesh with olive oil, salt, black pepper, garlic powder, and paprika until smooth.
  • Fill the sweet potato skins with the mixture, top with cheddar cheese and bacon if using.
  • Bake the filled skins for an additional 15-20 minutes until the cheese is melted and bubbly.
