Potatoes
- 4 large russet potatoes These potatoes are perfect for baking due to their starchy texture.
- 1 cup shredded sharp cheddar cheese This cheese adds a bold flavor.
- 0.5 cup cooked and crumbled bacon Bacon brings a savory crunch.
- 0.25 cup sour cream Adds a tangy richness.
- 0.25 cup green onions, chopped Adds a fresh flavor.
- 2 tablespoons olive oil Helps crisp up the potato skins.
- 1 teaspoon garlic powder Enhances the overall flavor.
- 0.5 teaspoon salt Essential for flavor.
- 0.25 teaspoon black pepper Adds a subtle heat.
Wash and scrub the russet potatoes thoroughly. Prick each potato several times with a fork. Bake at 400°F for 45-60 minutes until tender. Let cool for 10 minutes.
Cut each potato in half lengthwise and scoop out the insides, leaving about 1/4 inch of potato on the skin.
In a mixing bowl, combine the scooped-out potato, cheddar cheese, bacon, sour cream, garlic powder, salt, and black pepper. Mix until well combined.
Brush the outside of each potato skin with olive oil. Fill each skin with the cheesy mixture and place skin-side down on a baking sheet.
Bake the filled potato skins for an additional 15-20 minutes until golden and crispy. Sprinkle with chopped green onions before serving.
