  • 4 large russet potatoes These potatoes are perfect for baking due to their starchy texture.
  • 1 cup shredded sharp cheddar cheese This cheese adds a bold flavor.
  • 0.5 cup cooked and crumbled bacon Bacon brings a savory crunch.
  • 0.25 cup sour cream Adds a tangy richness.
  • 0.25 cup green onions, chopped Adds a fresh flavor.
  • 2 tablespoons olive oil Helps crisp up the potato skins.
  • 1 teaspoon garlic powder Enhances the overall flavor.
  • 0.5 teaspoon salt Essential for flavor.

Instructions
 

  • Wash and scrub the russet potatoes thoroughly. Prick each potato several times with a fork. Bake at 400°F for 45-60 minutes until tender. Let cool for 10 minutes.
  • Cut each potato in half lengthwise and scoop out the insides, leaving about 1/4 inch of potato on the skin.
  • In a mixing bowl, combine the scooped-out potato, cheddar cheese, bacon, sour cream, garlic powder, salt, and black pepper. Mix until well combined.
  • Brush the outside of each potato skin with olive oil. Fill each skin with the cheesy mixture and place skin-side down on a baking sheet.
  • Bake the filled potato skins for an additional 15-20 minutes until golden and crispy. Sprinkle with chopped green onions before serving.
