Ground Beef
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 tablespoon taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup tortilla chips, crushed
- 1/4 cup fresh cilantro, chopped (optional)
- Salt and pepper to taste
Prep your ingredients by dicing the onion and mincing the garlic. Drain and rinse the black beans and corn.
In a large skillet, heat oil over medium heat. Add the ground beef and cook for 5-7 minutes until browned. Drain excess fat, then add onion and garlic. Cook for another 3-4 minutes until onion is translucent.
Transfer the beef mixture into a greased 9x13-inch baking dish. Sprinkle half of the shredded cheddar and Monterey Jack cheese over the top. Add crushed tortilla chips, then top with remaining cheese.
Bake in a preheated oven at 350°F for 20-25 minutes until cheese is bubbly and golden. Let cool for a few minutes before serving.
