Ground Beef Mixture

  • 1 pound ground beef This is the star of the dish, providing a rich and hearty flavor.
  • 1 small onion, diced Onions add sweetness and depth to the filling.
  • 2 cloves garlic, minced Garlic brings a wonderful aroma and enhances the overall taste.
  • 1 teaspoon chili powder This spice adds warmth and a hint of heat.
  • 1 teaspoon cumin Cumin gives a unique earthy flavor that complements the beef.
  • 1 teaspoon paprika Paprika adds color and a mild sweetness.
  • 1 can (15 ounces) black beans, drained and rinsed Black beans provide protein and a creamy texture.
  • 1 can (10 ounces) red enchilada sauce This sauce is essential for that classic enchilada taste.
  • 8 small flour tortillas Tortillas are the perfect wrap for your delicious filling.
  • 2 cups shredded cheddar cheese Cheese is what makes these enchiladas cheesy and irresistible.
  • 1 cup sour cream Sour cream adds a cool, creamy contrast when serving.
  • to taste salt and pepper These seasonings enhance all the flavors.
  • 1 bunch fresh cilantro, chopped (for garnish) Cilantro adds a fresh touch and brightens the dish.

Instructions
 

  • Heat a large skillet over medium heat. Add the pound of ground beef to the skillet. Cook it until it’s nicely browned, about 5-7 minutes. Drain excess fat if necessary.
  • Add the diced onion and minced garlic to the skillet. Cook for about 3-4 minutes until the onion is translucent and soft.
  • Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Stir and cook for another minute.
  • Add the drained black beans and half of the enchilada sauce to the skillet. Mix well and remove from heat.
  • Mix 1 cup of shredded cheddar cheese into the beef mixture.
  • Spoon about 1/4 cup of the beef mixture onto the center of a flour tortilla. Roll tightly and place seam-side down in a greased 9x13 inch baking dish. Repeat until all tortillas are filled.
  • Pour the remaining enchilada sauce over the top and sprinkle the rest of the shredded cheese on top.
  • Preheat your oven to 350°F. Bake for about 20-25 minutes until the cheese is bubbly and golden brown.
  • Let cool for a few minutes before serving. Serve hot, topped with sour cream and fresh cilantro.
