- 2 cups cooked chicken, shredded or diced
- 3 medium zucchinis, sliced into rounds
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup fresh basil, chopped (optional for garnish)
Preheat your oven to 375°F (190°C).
Slice the zucchinis into rounds, about 1/4 inch thick.
Cook the chicken if not already cooked, then shred or dice it.
In a large mixing bowl, combine the cooked chicken, sliced zucchinis, halved cherry tomatoes, mozzarella cheese, Parmesan cheese, and softened cream cheese. Add garlic powder, Italian seasoning, salt, and pepper. Drizzle with olive oil and mix until well combined.
Transfer the mixture into a greased 9x13 inch baking dish and spread evenly.
