- 2 cups cooked chicken, shredded or diced
- 10.5 oz can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 6 oz package stuffing mix
- 1.5 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon black pepper
- 2 tablespoons butter, melted
Preheat your oven to 350°F.
Shred or dice the cooked chicken into bite-sized pieces and place in a large mixing bowl.
In a separate bowl, combine the stuffing mix with 1 ½ cups of chicken broth and stir gently until moistened.
Add cream of chicken soup, sour cream, garlic powder, onion powder, and black pepper to the chicken mixture and stir until well combined. Fold in the frozen mixed vegetables and half of the shredded cheddar cheese.
Grease a 9x13 inch baking dish and spread the chicken mixture evenly across the bottom. Layer the stuffing mixture on top, drizzle melted butter over the stuffing, and sprinkle remaining cheddar cheese on top. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown and bubbly.
Let the casserole cool for 5-10 minutes before serving.
