Instructions
 

  • Cut chicken into bite-sized pieces and season with salt and pepper.
  • Heat olive oil in crockpot over medium heat, sauté onion for 3-4 minutes until translucent, then add garlic and cook for 1 minute.
  • Add chicken, basil, oregano, red pepper flakes, chicken broth, and diced tomatoes to the crockpot. Stir and cover.
  • Cook on low for 360 minutes or on high for 240 minutes.
  • Stir in heavy cream, mozzarella, and Parmesan cheese until melted. Adjust seasoning and serve hot garnished with parsley.
