- 2 cups cooked chicken, shredded
- 4 cups fresh broccoli florets
- 1 cup uncooked brown rice
- 2.5 cups low-sodium chicken broth
- 1 cup shredded cheddar cheese
- 1 cup Greek yogurt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon black pepper
- 0.5 teaspoon salt
- 1 tablespoon olive oil
- 0.5 cup breadcrumbs (optional for topping)
Prepare the chicken and broccoli by cooking the chicken if needed and shredding it. Wash and cut the broccoli into smaller pieces.
In a large mixing bowl, combine uncooked brown rice and low-sodium chicken broth. Add Greek yogurt and mix well.
Add shredded chicken and broccoli to the bowl. Sprinkle in garlic powder, onion powder, black pepper, and salt. Fold all ingredients together.
Pour the mixture into a greased 9x13 inch baking dish. If using, sprinkle breadcrumbs on top. Cover with aluminum foil and bake for 35 minutes.
Remove the foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted and bubbly.
Let the casserole cool for 5 minutes before serving.
