  • 2 cups cooked chicken, shredded
  • 4 cups fresh broccoli florets
  • 1 cup uncooked brown rice
  • 2.5 cups low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 1 tablespoon olive oil
  • 0.5 cup breadcrumbs (optional for topping)

Instructions
 

  • Prepare the chicken and broccoli by cooking the chicken if needed and shredding it. Wash and cut the broccoli into smaller pieces.
  • In a large mixing bowl, combine uncooked brown rice and low-sodium chicken broth. Add Greek yogurt and mix well.
  • Add shredded chicken and broccoli to the bowl. Sprinkle in garlic powder, onion powder, black pepper, and salt. Fold all ingredients together.
  • Pour the mixture into a greased 9x13 inch baking dish. If using, sprinkle breadcrumbs on top. Cover with aluminum foil and bake for 35 minutes.
  • Remove the foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted and bubbly.
  • Let the casserole cool for 5 minutes before serving.
