- 2 cups cauliflower rice fresh or frozen
- 2 cups broccoli florets fresh or frozen
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup cream cheese softened
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup grated Parmesan cheese
- 1/4 cup green onions chopped, for garnish
Preheat the oven to 375°F.
Gather and prepare all ingredients, washing and chopping vegetables as needed.
If using fresh cauliflower, rice it in a food processor. If using frozen, thaw according to package instructions.
In a large mixing bowl, combine cauliflower rice, broccoli florets, cheddar cheese, mozzarella cheese, cream cheese, sour cream, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
Transfer the mixture to a greased 9x13 inch baking dish and spread evenly. Sprinkle Parmesan cheese on top.
Bake in the preheated oven for 25-30 minutes until cheese is bubbly and golden brown. Optionally broil for an additional 2-3 minutes for a crispier top.
Let cool for 5 minutes, garnish with chopped green onions, and serve.
