Ingredients
  

Vegetables

  • 2 cups cauliflower rice fresh or frozen
  • 2 cups broccoli florets fresh or frozen
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese softened
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup green onions chopped, for garnish

Instructions
 

  • Preheat the oven to 375°F.
  • Gather and prepare all ingredients, washing and chopping vegetables as needed.
  • If using fresh cauliflower, rice it in a food processor. If using frozen, thaw according to package instructions.
  • In a large mixing bowl, combine cauliflower rice, broccoli florets, cheddar cheese, mozzarella cheese, cream cheese, sour cream, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
  • Transfer the mixture to a greased 9x13 inch baking dish and spread evenly. Sprinkle Parmesan cheese on top.
  • Bake in the preheated oven for 25-30 minutes until cheese is bubbly and golden brown. Optionally broil for an additional 2-3 minutes for a crispier top.
  • Let cool for 5 minutes, garnish with chopped green onions, and serve.
