Butternut Squash
- 2 medium butternut squashes, halved and seeds removed
- 1 pound ground beef
- 4 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup chopped fresh parsley (for garnish)
Preheat your oven to 400°F. Cut the butternut squashes in half lengthwise and remove the seeds. Place them cut-side down on a baking sheet and roast for 30-35 minutes until tender.
In a skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove and set aside, leaving the drippings in the pan.
Add diced onion to the skillet and cook for about 5 minutes until translucent. Stir in minced garlic and cook for an additional minute.
Add ground beef to the skillet, breaking it apart as it cooks. Cook until browned, about 6-8 minutes. Drain excess fat if necessary, then stir in smoked paprika, oregano, salt, and pepper.
In a large mixing bowl, combine the cooked beef mixture with the crispy bacon, shredded cheddar cheese, softened cream cheese, and sour cream. Mix until well combined.
Flip the roasted squash cut-side up and fill each half with the beef and cheese mixture. Return to the oven and bake for an additional 15-20 minutes until the cheese is melted and bubbly.
Let the stuffed squash cool for a few minutes before serving. Garnish with chopped fresh parsley.
