Ground Beef
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 cups potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/4 cup sour cream
- 2 tablespoons fresh parsley, chopped (for garnish)
Brown the ground beef in a large pot over medium heat for 5-7 minutes, breaking it into smaller pieces. Drain excess fat and set aside.
Sauté the diced onion and minced garlic in the same pot for 3-4 minutes until the onion is translucent.
Add beef broth, diced potatoes, carrots, and celery. Stir in Worcestershire sauce, mustard, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
Stir in the cooked ground beef, shredded cheddar cheese, milk, and sour cream. Mix until cheese melts and soup is creamy, about 5 minutes.
Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
