  • 4 large russet potatoes peeled and diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions
 

  • Peel and dice the russet potatoes into small cubes. Chop the onion and mince the garlic.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent.
  • Add the diced potatoes, vegetable broth, dried thyme, dried rosemary, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until potatoes are tender.
  • Blend the soup until smooth and creamy using an immersion blender or a traditional blender.
  • Return the blended soup to low heat. Stir in the heavy cream and shredded cheddar cheese. Cook for an additional 5 minutes until cheese melts completely.
  • Serve hot, garnished with chopped fresh parsley.
