  • 1 8-ounce package corn tortillas, cut into strips Forms the base of the casserole.

Instructions
 

  • Prep all ingredients by chopping vegetables and measuring canned goods.
  • In a large skillet, cook ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat, then add onion, bell pepper, and garlic. Sauté for about 5 minutes until tender.
  • Layer half of the corn tortilla strips in a baking dish, followed by half of the beef mixture and half of the cheese. Repeat the layers.
  • Cover with foil and bake in a preheated oven at 350°F for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden. Let cool for 5 minutes before serving.

Notes

Consider making ahead of time and storing in the refrigerator before baking.
