Carrots

  • 2 cups grated carrots about 4 medium carrots
  • 1 cup almond flour
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup choose your preferred sweetener
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  • In a large mixing bowl, combine grated carrots, almond flour, applesauce, honey or maple syrup, eggs, and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet ingredients and stir until just combined. Fold in nuts and raisins if using.
  • Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, checking for doneness with a toothpick.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare your favorite frosting, such as cream cheese frosting, and frost the cooled cake.
