Graham cracker crust
- 1.5 cups graham cracker crumbs
- 0.5 cups unsalted butter, melted
- 2 cups semi-sweet chocolate chips
- 1 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1 cups caramel sauce
- 1 cups sour cream
- 0.25 teaspoon salt
Prepare the graham cracker crust by mixing graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan. Bake at 325°F for 10 minutes and let cool.
Melt semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals until smooth. In a large bowl, beat granulated sugar and cream cheese until creamy. Add eggs one at a time, mixing well. Stir in melted chocolate and vanilla extract.
Layer half of the cheesecake batter over the cooled crust, drizzle half of the caramel sauce, then pour the remaining batter and drizzle the rest of the caramel. Swirl the caramel into the batter.
Bake in the preheated oven for 50-60 minutes until the center is set but slightly jiggly. Cool in the oven with the door cracked for 1 hour, then refrigerate for at least 4 hours or overnight.
