Crust
- 1.5 cups graham cracker crumbs
- 0.5 cups unsalted butter, melted
- 2 tablespoons granulated sugar for the crust
- 1 package (8-ounce) cream cheese, softened the star of the cheesecake filling
- 0.5 cups granulated sugar for the cheesecake filling
- 1 teaspoon vanilla extract
- 1 large egg helps to set the cheesecake filling
- 2 cups peeled and diced apples about 2 medium apples
- 1 teaspoon ground cinnamon
- 0.5 cups caramel sauce store-bought or homemade
- 0.25 cups chopped pecans optional for a nutty crunch
Preheat your oven to 350°F. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of a greased 8x8-inch baking dish.
In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add egg and mix until combined.
Toss apples with cinnamon and fold into the cream cheese mixture. Pour over the crust and drizzle with caramel sauce.
