Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 2 tablespoons granulated sugar for the crust
  • 1 package (8-ounce) cream cheese, softened the star of the cheesecake filling
  • 0.5 cups granulated sugar for the cheesecake filling
  • 1 teaspoon vanilla extract
  • 1 large egg helps to set the cheesecake filling
  • 2 cups peeled and diced apples about 2 medium apples
  • 1 teaspoon ground cinnamon
  • 0.5 cups caramel sauce store-bought or homemade
  • 0.25 cups chopped pecans optional for a nutty crunch

Instructions
 

  • Preheat your oven to 350°F. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of a greased 8x8-inch baking dish.
  • In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add egg and mix until combined.
  • Toss apples with cinnamon and fold into the cream cheese mixture. Pour over the crust and drizzle with caramel sauce.
  • Bake for 30-35 minutes until set and lightly golden. Cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before slicing.
