Instructions
 

  • Wash and chop all vegetables. Dice onion, bell pepper, carrots, and celery. Mince garlic cloves finely.
  • In a large pot, heat olive oil over medium heat. Add diced onion, garlic, bell pepper, carrots, and celery. Sauté for 5-7 minutes until softened.
  • Stir in diced potatoes and cook for an additional 2-3 minutes.
  • Pour in chicken broth, bring to a boil, then reduce heat and let it simmer for 15-20 minutes until potatoes are tender.
  • Add heavy cream, Cajun seasoning, salt, and black pepper. Stir well and let it simmer for another 5 minutes.
  • Serve hot, garnished with chopped green onions and parsley.

Notes

Let the soup sit for a few minutes after cooking to allow flavors to meld.
