  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced (any color)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 green onions sliced (for garnish)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

  • Gather and prepare all fresh vegetables by dicing the onion, bell pepper, carrots, and celery, and peeling and cubing the potatoes.
  • In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic, bell pepper, carrots, and celery, and cook for an additional 5 minutes.
  • Add the cubed potatoes and pour in the chicken or vegetable broth. Bring to a boil, then reduce heat to low and let simmer for 15-20 minutes until the potatoes are tender.
  • Using a potato masher, mash some of the potatoes in the pot to thicken the soup while leaving some chunks for texture. Alternatively, use an immersion blender for a smoother consistency.
  • Stir in the heavy cream and Cajun seasoning, season with salt and pepper to taste, and heat through for another 5 minutes. Serve hot, garnished with sliced green onions and chopped parsley.
