Chicken

  • 2 cups cooked, shredded chicken
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup whole wheat breadcrumbs

Instructions
 

  • Prepare the chicken by boiling or baking until fully cooked, then shred it into bite-sized pieces.
  • In a large mixing bowl, combine halved cherry tomatoes and chopped basil. Drizzle in balsamic vinegar and olive oil, then sprinkle garlic powder, onion powder, salt, and pepper. Stir gently until well coated.
  • In a greased 9x13 inch baking dish, spread the shredded chicken evenly, pour the bruschetta topping over it, and sprinkle shredded mozzarella cheese on top. Add whole wheat breadcrumbs for extra crunch.
  • Preheat the oven to 375°F and bake the casserole for 25-30 minutes until the cheese is bubbly and breadcrumbs are golden brown. Let it cool for 5 minutes before serving.
