  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup brown sugar cinnamon filling store-bought or homemade
  • 1 cup powdered sugar for icing
  • 2 tablespoons milk for icing
  • Sprinkles optional, for decoration

Instructions
 

  • Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients and mix until just combined.
  • Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Roll out one disk of dough on a floured surface to about 1/4 inch thick and cut into rectangles approximately 3x4 inches. Place half on a prepared baking sheet.
  • Spoon a small amount of the brown sugar cinnamon filling onto the center of each rectangle, leaving a border around the edges. Roll out the second disk of dough, cut into rectangles, and place over the filled rectangles. Press edges together to seal and crimp with a fork.
  • Preheat the oven to 350°F (175°C) and bake the cookies for 12-15 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
