Chicken

  • 2 pounds boneless, skinless chicken thighs Juicy and tender, perfect for soaking up the marinade.
  • 1 cup pineapple chunks Fresh or canned, enhances the overall flavor.

  • 1/4 cup soy sauce Brings a salty depth to the dish.
  • 1 tablespoon apple cider vinegar Adds a tangy kick.
  • 1 teaspoon garlic powder Gives a warm, aromatic flavor.
  • 1 teaspoon ground ginger Adds a hint of spice and warmth.
  • 1/2 teaspoon black pepper Adds a subtle heat.
  • 2 tablespoons vegetable oil Used for cooking the chicken.
  • 1/4 cup green onions, chopped For garnish, adding a fresh crunch.

Instructions
 

  • In a large bowl, combine brown sugar, soy sauce, apple cider vinegar, garlic powder, ground ginger, and black pepper. Whisk until sugar dissolves. Add chicken thighs, coat well, cover, and marinate in the refrigerator for at least 30 minutes.
  • Prepare pineapple by cutting it into chunks if using fresh. Set aside.
  • Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade and place in the skillet. Cook for 5-7 minutes on each side until golden brown and fully cooked.
  • Pour reserved marinade into the skillet with chicken and add pineapple chunks. Bring to a simmer and cook for an additional 5 minutes to thicken the sauce.
  • Remove from heat and garnish with chopped green onions. Serve over steamed rice or quinoa.
