Broccoli
- 1 cup finely chopped broccoli florets
- 1 cup crumbled feta cheese
- 1 cup all-purpose flour
- 0.5 cup unsweetened cocoa powder
- 0.5 cup granulated sugar
- 0.25 cup brown sugar
- 0.5 teaspoon baking powder
- 0.25 teaspoon salt
- 0.5 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 0.5 cup chopped walnuts (optional)
Wash and finely chop the broccoli florets, then set aside.
In a mixing bowl, combine all-purpose flour, cocoa powder, granulated sugar, brown sugar, baking powder, and salt. Whisk until well mixed.
In another bowl, mix vegetable oil, eggs, and vanilla extract until smooth.
Gradually add the wet mixture to the dry ingredients, stirring gently. Fold in the broccoli, feta cheese, and walnuts if using.
Pour the batter into a prepared baking pan and bake in a preheated oven for 25-30 minutes. Check for doneness with a toothpick.
Allow the brownies to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
