Broccoli

  • 1 cup finely chopped broccoli florets
  • 1 cup crumbled feta cheese
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts (optional)

Instructions
 

  • Wash and finely chop the broccoli florets, then set aside.
  • In a mixing bowl, combine all-purpose flour, cocoa powder, granulated sugar, brown sugar, baking powder, and salt. Whisk until well mixed.
  • In another bowl, mix vegetable oil, eggs, and vanilla extract until smooth.
  • Gradually add the wet mixture to the dry ingredients, stirring gently. Fold in the broccoli, feta cheese, and walnuts if using.
  • Pour the batter into a prepared baking pan and bake in a preheated oven for 25-30 minutes. Check for doneness with a toothpick.
  • Allow the brownies to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
