Wet Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 lemon zest
  • 1 tablespoon lemon juice
  • Powdered sugar for dusting (optional)

Instructions
 

  • Gather all your ingredients to make the cooking process smoother.
  • In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt. In another bowl, combine the wet ingredients: milk, egg, melted butter, vanilla extract, lemon zest, and lemon juice. Stir until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the blueberries carefully.
  • Preheat your oven to 350°F and prepare your mini muffin tin. Spoon the batter into each cup, filling them about two-thirds full. Bake for 12-15 minutes until golden brown.
  • Allow the pancake bites to cool for a few minutes before transferring them to a wire rack. Dust with powdered sugar if desired and serve warm.
