Biscoff Crust

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 pieces ripe bananas, sliced
  • 1 cup Biscoff cookies, crushed
  • 1/2 cup caramel sauce
  • 1/2 cup whipped cream (for topping)
  • extra pieces Biscoff cookies for garnish

Instructions
 

  • Crush the Biscoff cookies into fine crumbs and spread half in the bottom of a 9x9-inch baking dish.
  • In a medium saucepan, combine whole milk, heavy cream, granulated sugar, cornstarch, and salt. Whisk over medium heat until thickened (5-7 minutes). Stir in vanilla extract and cool for 10 minutes.
  • Spread half of the banana pudding over the crushed Biscoff cookies, add a layer of sliced bananas, and repeat with remaining ingredients.
  • Drizzle caramel sauce over the top layer of bananas, cover with plastic wrap, and refrigerate for at least 240 minutes or overnight.
