Prepare all your ingredients by slicing the beef sirloin, dicing the onion, mincing the garlic, and slicing the mushrooms.
In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and cook for 3-4 minutes until browned. Remove from skillet and set aside.
In the same skillet, add the diced onion and minced garlic. Sauté for 3 minutes until the onion is translucent. Add the sliced mushrooms and cook for 5 minutes until tender.
Return the browned beef to the skillet. Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer and cook for 5 minutes.
Reduce heat to low and stir in the sour cream. Mix until well combined and heated through. Season with salt and pepper. Serve over cooked egg noodles and garnish with fresh parsley.
