Ingredients
  

Beef

  • 1 pound beef stew meat Cut into bite-sized pieces
  • 2 tablespoons vegetable oil For browning the beef
  • 1 medium onion Chopped
  • 2 cloves garlic Minced
  • 4 cups beef broth The heart of the dish
  • 2 cups egg noodles Soak up the flavors
  • 1 teaspoon Worcestershire sauce Enhances umami flavor
  • 1 teaspoon dried thyme Adds earthiness
  • salt and pepper To taste
  • 1 cup frozen peas and carrots Adds color and nutrition
  • 2 tablespoons chopped fresh parsley Optional, for garnish

Instructions
 

  • Prepare the ingredients by cutting the beef into bite-sized pieces, chopping the onion, and mincing the garlic.
  • In a large pot, heat the vegetable oil over medium-high heat. Brown the beef on all sides for about 5-7 minutes, then remove and set aside.
  • Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes. Return the beef to the pot, add beef broth, Worcestershire sauce, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 60 minutes.
  • Add the egg noodles and frozen peas and carrots to the pot. Stir well and simmer for an additional 10-12 minutes until the noodles are cooked.
  • Taste and adjust seasoning if necessary. Stir in fresh parsley if desired, and serve hot.
