Instructions
 

  • Heat a large skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  • Add diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  • Stir in chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2 minutes.
  • Remove from heat and stir in shredded cheddar cheese and refried beans until well mixed.
  • Lay a tortilla flat, spoon about 1/4 of the filling onto the center, fold sides over, and roll tightly.
  • Heat about 1 inch of vegetable oil in a skillet over medium-high heat. Add chimichangas seam side down.
  • Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
