Ingredients
  

Salmon

  • 1 pound salmon fillet skin removed and cut into bite-sized pieces
  • 1 cup panko breadcrumbs for coating
  • 1/2 cup all-purpose flour for coating
  • 1 large egg beaten, for binding
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise for bang bang sauce
  • 2 tablespoons sweet chili sauce for bang bang sauce
  • 1 tablespoon sriracha adjust to taste for bang bang sauce
  • 2 green onions sliced, for garnish
  • lemon wedges for serving

Instructions
 

  • Prepare the salmon by cutting it into bite-sized pieces and setting aside.
  • Make the bang bang sauce by mixing mayonnaise, sweet chili sauce, and sriracha in a small bowl.
  • Coat each salmon piece in flour, then dip in beaten egg, and finally coat with panko breadcrumbs.
  • Bake the coated salmon bites in a preheated oven at 400°F for 12-15 minutes until golden brown.

Notes

Serve warm with bang bang sauce or alternative sauces.
