Banana Mixture
- 2 medium ripe bananas, mashed The riper, the better!
- 1 cup rolled oats Provides the base for your cookies.
- 1/2 cup peanut butter Can use any nut butter.
- 1/4 cup honey or maple syrup Acts as a natural sweetener.
- 1/2 teaspoon vanilla extract Enhances the overall flavor.
- 1/2 teaspoon baking soda Helps the cookies rise.
- 1/4 teaspoon salt Balances the sweetness.
- 1/2 teaspoon cinnamon (optional) Adds a warm spice.
- 1/2 cup chocolate chips or raisins (optional) Adds extra sweetness and texture.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mash the ripe bananas in a large mixing bowl until smooth with a few small lumps.
In a separate bowl, combine the rolled oats, baking soda, salt, and cinnamon (if using).
Add peanut butter, honey or maple syrup, and vanilla extract to the mashed bananas and stir until well combined. Gradually add the dry mixture to the wet ingredients and mix until just combined.
Drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
