Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed

Wet Ingredients

  • 1 large ripe banana, mashed (about 1/2 cup)
  • 1/2 cup plain Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with paper liners or grease it lightly.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  • In a large bowl, combine the granulated sugar, brown sugar, mashed banana, Greek yogurt, egg, vanilla extract, and vegetable oil. Mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
  • Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.
