Banana Bread Cookies Ingredients
- 1 cup ripe bananas, mashed (about 2 medium bananas)
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup chocolate chips (optional)
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes. Add the mashed bananas, egg, and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined.
Scoop out portions of dough using a tablespoon and drop them onto the prepared baking sheet, spacing them about 2 inches apart. Optionally, sprinkle extra chocolate chips or nuts on top.
Bake for 10-12 minutes until the edges are lightly golden and the centers remain soft. Let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
