Banana Bread Cookies Ingredients
- 1 cup mashed ripe bananas (about 2 medium bananas)
- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup chocolate chips optional
- 1/2 cup chopped walnuts or pecans optional
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract, then stir in the mashed bananas.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the banana mixture, stirring gently until just combined. Fold in chocolate chips or nuts if using.
